Chunky Apple Cake

Ingredients:

2 cups granulated sugar

1/2 cup butter or margarine

1 teaspoon vanilla extract

2 eggs, beaten

2 cups all-purpose flour

1 teaspoon soda

1 teaspoon salt

2 teaspoons ground cinnamon

4 cups Granny Smith apples, peeled and chopped in large chunks

1 cup pecans

Directions:

Preheat oven to 350 degrees. In a large mixing bowl, stir together sugar, butter, eggs, and vanilla until blended. Combine flour, soda, salt and cinnamon; add to butter mixture, stirring until blended. Stir in apples and pecans.

Spread into a greased 13" x 9" baking pan. Bake at 350 degrees for 30-35 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack.

Spread cake with Cream Cheese Frosting and chopped pecans OR slice the cake and cover with Brown Sugar Sauce.
