St. Patrick's Day Cupcakes

Well, technically, these cupcakes could be eaten on any day of the year, but since we're making them green and had to give them some kind of a name this is what we settled on.

Ingredients:

1 3/4 cups all-purpose flour

2/3 cups granulated sugar

1 package (3.4 ounces) instant pistachio pudding mix

2 teaspoons baking soda

1/2 teaspoon salt

2 eggs, at room temperature

1 1/4 cups milk

1/2 cup cooking oil

1 teaspoon vanilla extract

Directions:

Preheat oven to 375 degrees. In a medium bowl, combine all of the dry ingredients. In another bowl, beat eggs, milk, oil and vanilla; add to dry ingredients and mix until blended. Fill paper-lined muffin cups 3/4's full. Bake at 375 degrees for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack.

While the cupcakes are baking, prepare the Cream Cheese Frosting. Add green food coloring to the frosting. Frost the cupcakes with the green frosting. Yields 1 dozen.
