Rocky Road Cake |
Ingredients: 1 package (18.25 ounces) devil's food cake mix 1 package (3.9 ounces) chocolate instant pudding mix 1 1/3 cups buttermilk 3 eggs, at room temperature 1/2 cup cooking oil 1 1/4 cups mini semisweet chocolate chips 3/4 cup chopped pecans Directions: Preheat oven to 350 degrees. Coat two 9" round cake pans with cooking spray. Set aside. On low speed, beat the cake mix, dry pudding mix, buttermilk, eggs, and oil for 30 seconds. Increase speed to medium-high and beat for two minutes. Stir in one cup of the chocolate chips; stir well. Add the pecans and stir again. Divide the cake batter between the two prepared cake pans. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool on wire racks for 20 minutes. Remove from the cake pans and cool completely. Prepare the Rocky Road Frosting. Place first cake on serving dish and spread top with frosting. Place second cake on top. Cover top and sides with frosting. If desire, press extra chocolate chips, mini marshmallows, and pecans into top and sides of cake for garnish. |
