Old-Fashioned Jam Cake |
Ingredients: 2 cups granulated sugar 1 cup shortening 6 eggs, at room temperature 2 cups buttermilk 4 cups all-purpose flour 1 teaspoon baking soda 2 teaspoons allspice 2 teaspoon cinnamon 2 teaspoons nutmeg 2 cups blackberry jam 2 cups strawberry jam 1 cup cherry preserves 1 cup chopped pecans Directions: Preheat oven to 350 degrees. Grease and flour angel food pan. In a large bowl, cream sugar and shortening with electric mixer. Add eggs and mix well. Alternate adding buttermilk and flour; mix well. Add the rest of the dry ingredients and mix again. Add jams, preserves, and pecans; mix well. Pour into angel food cake pan. Bake at 350 degrees for 2 hours or until done. Place on wire rack to cool; invert on to cake platter. Prepare the Never-Fail Caramel Frosting and coat the cake with icing. |
