Low-Fat Guacamole

Ingredients:

1 cup green peas, thawed

juice of 1/2 large lime, plus 1 tablespoon

2 tablespoons favorite salsa

4 ripe avocados, pits and skin removed

1 tablespoon freshly chopped cilantro

1/4 teaspoon salt

1/2 teaspoon crushed black pepper

Directions:

Place peas, lime juice, and salsa in blender and puree until smooth.

Smash the avocadoes and add the pea puree, cilantro, salt and pepper and mix thoroughly. Chill.

(Note: If preparing the guacamole ahead of time, pour the additional lime juice over the guacamole to keep it from oxidizing.)

Serve with Spiced Corn Chips.
