Light Pancakes

Ingredients:

2 eggs, at room temperature

2 cups all-purpose flour, sifted

1 teaspoon salt

1 tablespoon baking powder

1 teaspoon vanilla extract

2 tablespoons butter, melted

2 cups milk

Directions:

Divide the yolk and white of the eggs. Set aside the yolks for later. Beat the whites until they form a peak.

In a separate bowl, beat egg yolks and add flour, salt, baking powder, vanilla, butter and milk. Mix well and then fold into the egg whites.

Cook on griddle or skillet over medium heat for about 2 minutes on each side until pancakes are golden brown, turning when pancakes have bubbly surfaces and edges are slightly dry.

Serve with hot Good-On-Everything Syrup.
