Custardy Chicken Bake

Ingredients:

6 skinless, boneless chicken breast halves

2 tablespoons cooking oil

1/2 teaspoon salt

1/4 teaspoon crushed pepper

1 1/2 cups biscuit/baking mix

1 teaspoon dried tarragon leaves

1/2 teaspoon salt

1 1/2 cups milk

3 eggs, at room temperature

mushroom sauce (see recipe under "Sauces")

Directions:

Preheat oven to 350 degrees. Grease 13" x 9" baking dish. Heat oil in 10" skillet. Fry chicken until light golden brown. Place chicken, skin sides up, in baking dish. Sprinkle with 1/2 teaspoon salt and the pepper.

Beat baking mix, tarragon, 1/2 teaspoon salt, the milk and eggs with hand beater until smooth. Pour over chicken. Bake at 350 degrees for 55-60 minutes or until golden brown. Serve with Mushroom Sauce.
