Apricot & Orange Cake

Ingredients:

6 tablespoons apricot jam

grated peel & juice of 1 medium orange

8 ounces butter

4 large eggs, at room temperature

1 can (14 ounces) sweetened condensed milk

2 ounces ground almonds

1 teaspoon ground ginger

grated peel & juice of 1 medium orange

8 ounces self-rising flour

1 teaspoon baking powder

Directions:

Preheat oven to 350 degrees. Grease a 8" square baking dish with butter. Mix the jam with the orange peel and juice and spoon into the buttered dish. Place all other ingredients in a mixing bowl and beat using an electric hand beater until smooth and pale. Pour over the apricot mixture. Bake at 350 degrees for 25-30 minutes or until toothpick inserted near the center comes out clean.

Serve warm, either plain or with Warm Custard.
