Zucchini Appetizers

Ingredients:

4 eggs, slightly beaten

1 cup Jiffy baking mix

3 cups fresh zucchini, thinly sliced

1/2 cup parmesan cheese

1/2 cup onion, finely chopped

2 tablespoons parsley

1/2 teaspoon salt

1/2 teaspoon seasoned salt

1/2 teaspoon oregano

1/4 teaspoon black pepper

1 clove garlic, finely chopped

1/2 cup cooking oil

Directions:

Preheat oven to 350 degrees. Mix all ingredients in a large mixing bowl, stirring until all zucchini slices are coated. Spray a 9" x 13" pan. Spread zucchini slices in pan. Bake at 350 degrees for about 25 minutes or until golden brown.
