Winter Jam

Ingredients:

1 pound dried apricots

2 cups orange juice

2 cups water

1 pineapple (about 3 pounds), cored, peeled, and cut in 2" chunks

2 cups sugar

4 tablespoons lime juice

4 tablespoons honey

Directions:

In a medium saucepan over medium heat, simmer the apricots in the orange juice and water for 15-20 minutes, until very soft. With a slotted spoon, remove the fruit, reserving the liquid in the pan, and puree in a food processor until smooth. Add the pineapple to the processor and pulse until only small pieces of pineapple remain. Pour the mixture back into the saucepan with the liquid and stir in the sugar, lime juice and honey. Cook over medium heat, stirring occasionally, for 1 hour, until the mixture is very thick and all the liquid has been absorbed. Pour into four 10-ounce jars and refrigerate or freeze. This will keep in the refrigerator for several weeks. If you're freezing it, remove from the freezer and place in refrigerator to thaw before using.
