Wilted Greens

Ingredients:

1 head lettuce, separated

1/2 head cabbage, shredded

1/2 cup dandelion leaves

1 cup spinach leaves

4 or 5 slices bacon

2 tablespoons butter

1/4 cup mild vinegar

1 teaspoon chopped fresh herbs (basil, oregano, etc.)

1 teaspoon grated onion

1 teaspoon granulated sugar

2 hard-boiled eggs, sliced

Directions:

In a salad bowl, mix the lettuce, cabbage, dandelion and spinach leaves. Set aside until dressing is prepared.

In a skillet, cook the bacon until brown and crisp.  Remove from skillet, drain on absorbent paper and crumble into small pieces.

In the same skillet, melt butter. Add vinegar and herbs; stir together.  Add the bacon crumbs, onion and sugar. Stir until the sugar is dissolved.

While still hot, pour the dressing over the greens. Garnish with egg slices.
