Wild West Potato Salad

Ingredients:

6 cups chopped cooked potatoes

2 cups chopped cooked ham

1 cup celery, chopped

1/2 cup green onion, chopped

1/4 cup chopped pimiento

1/2 teaspoon salt

1/4 teaspoon crushed black pepper

3/4 cup mayonnaise

4 hard-boiled eggs, sliced

celery leaves or watercress, for garnish

Directions:

In a large salad bowl, combine all ingredients except the eggs and garnish; mix lightly. Chill. Top with egg slices and garnish of your choice. Yields 8-10 servings.
