Waikiki Lemon-Coconut Cream Pie

Ingredients:

2 packages (4-serving size) instant vanilla pudding mix

1 package (4-serving size) lemon gelatin

1 1/3 cups dry milk powder

2 cups Mountain Dew

1/2 cup Cool Whip

1 teaspoon coconut extract

1/4 cup flaked coconut

1 graham cracker pie crust (6 ounce)

1 (2 1/1" square) graham cracker, made into crumbs

Directions:

In a large bowl, combine the dry pudding mixes, gelatin and milk powder. Add Mountain Dew and mix well with a wire whisk. Blend in Cool Whip and coconut extract. Add 2 tablespoons coconut. Mix well to combine. Spread mixture into pie crust.

In a small bowl, combine graham cracker crumbs and remaining coconut. Evenly sprinkle crumb mixture over top. Refrigerate for at least 1 hour. Cut into 8 servings.
