Vegetable-Chicken Stack-Up

Ingredients:

2 cups chopped cooked chicken

1/2 teaspoon salt

1/8 teaspoon crushed black pepper

1 quart shredded iceburg lettuc

2 cups carrot slices

1 cup zucchini slices

1 cup red pepper rings

1 package (10 ounces) frozen peas, thawed

1 1/2 cups mayonnaise

2 tablespoons chopped chives

Directions:

In a medium bowl, combine chicken, salt & pepper; toss lightly.

In a 2 1/2 quart salad bowl, layer lettuce, carrot, zucchini, chicken, red pepper, and peas.

In a small bowl, combine mayonnaise and chives; mix well. Spread over salad. Cover and chill. Yields 6-8 servings.
