Vanilla Cookies

Ingredients:

3 cups all-purpose flour, sifted

3/4 cup granulated sugar

1 cup butter, softened (not melted)

3 egg yolks, beaten

1 teaspoon vanilla extract

3 egg whites

2 cups ground walnuts

1 cup granulated sugar

Directions:

Preheat oven to 325 degrees. In a large mixing bowl, sift flour and 3/4 cup sugar. With pastry blender, cut butter into flour mixture until well blended. Add beaten egg yolks and vanilla.

Mix dough together with your hands, using a kneading motion. Divide dough into four parts.

On a floured surface, roll out one section of dough at a time. Cut into shapes or circles. Place cookies on ungreased cookie sheets. Re-roll and continue to cut leftover dough, until all four sections have been used.

Beat egg whites slightly, add ground nuts and one cup of sugar. Spread a dollop of mixture on unbaked cookies. Bake for 10-12 minutes at 325 degrees. Allow to cool in pan for two minutes and then remove to wire rack to finish cooling.
