Vanilla Chip Cherry Cookies

Ingredients:

1 cup butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

2 eggs, at room temperature

1/4 teaspoon almond extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 package (10-12 ounces) vanilla or white chips

1 jar (10 ounces) maraschino cherries, drained and chopped

Directions:

Preheat oven to 375 degrees. In a large mixing bowl, cream butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in almond extract. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Stir in chips and cherries.

Drop by rounded tablespoonfuls 2" apart onto greased baking sheets. Bake at 375 degrees for 9-12 minutes or until lightly browned. Remove to wire racks to cool. Yield: about 50 cookies
