Turnip Soufle

Ingredients:

2 pounds turnips

1 medium onion, chopped

3 tablespoons butter

3 eggs, at room temperature

3/4 teaspoon salt

1/2 teaspoon crushed pepper

1 can cream of mushroom soup

1 cup cracker crumbs

1/2 cup parmesan cheese

Directions:

Preheat oven to 350 degrees. In a saucepan, cook turnips and onion in water until tender; drain and mash. Mix with butter, eggs, salt, pepper and soup. Pour into greased 13" x 9" baking dish. Top with cracker crumbs and parmesan cheese. Bake at 350 degrees for 30 minutes or until firm.
