Tomato Gravy

Ingredients:

1 can (14 ounces) stewed tomatoes, plain (not with all the spices)

8 ounces water

1/2 teaspoon salt

enough bacon to feed your family

2 heaping tablespoons all-purpose flour

1/4 teaspoon crushed black pepper

Directions:

In a medium saucepan, mix the tomatoes, water and salt; bring to a boil and then cover and simmer till you're ready to use it.

Put your pan of biscuits in the oven and bake them till they're golden brown.

If you have an iron skillet, this is the time to use it. I think that's what God intended iron skillets for. Fry enough bacon to feed your family. Remove the crisp bacon and set aside. Pour off excess fat drippings from the skillet, leaving at least two tablespoons in the bottom with any "crusties" that might be left. While the skillet is still hot, stir in two heaping tablespoons of flour and make a roux. Let is get chocolate brown. Pour the simmered tomatoes into it all at once, stirring constantly. Add black pepper. Turn on low heat and cover, while you're getting your eggs or other ingredients for breakfast ready.

When you're ready to eat, pour the gravy into a bowl. Split open a biscuit and ladle on the gravy. With your bacon and eggs, this is an unforgettable taste. Enjoy!
