Three Bean Salad

Ingredients:

1 can (15.75 ounces) yellow wax beans

1 can (15.75 ounces) cut green beans

1 can (15.75 ounces) red kidney beans

1 green pepper, chopped fine

1 small onion, chopped fine

1/2 cup vinegar

1/4 cup extra virgin olive oil

1/4 cup salad oil

3/4 cup granulated sugar

1/2 teaspoon Dijon mustard

1/4 cup chopped parsley

8 large sundried tomatoes, packed in oil, slivered

1/4 cup spicy sausage, cooked & diced

1 teaspoon salt

1/2 teaspoon crushed black pepper

Directions:

Drain all the beans thoroughly. Add green pepper and onion; mix well. Add remaining ingredients. Toss to blend. 

Serve immediately or cover with plastic wrap and refrigerate. The salad may be prepared several hours in advance. Remove from the refrigerator to take the chill off before serving.
