Sweet Potato Casserole

Ingredients:

3 cups sweet potatoes, cooked & mashed

2 eggs, beaten

1/2 teaspoon nutmeg

1 teaspoon vanilla extract

1 cup granulated sugar

1/4 cup margarine, melted

1/2 cup milk

1/2 teaspoon ground cinnamon

Directions:

Preheat oven to 350 degrees. In a large bowl, mix all ingredients together. Place in a 13" x 9" baking dish. Use one of the topping recipes below, combine all ingredients together, and spread on top of the potatoes. Bake at 350 degrees for 30-40 minutes. Yields 6-8 servings.

Topping #1 - 3/4 cup crushed corn flakes, 1/2 cup chopped pecans, 1/2 cup brown sugar, 1/2 cup melted margarine

Topping #2 - 1 cup brown sugar, 1/3 cup all-purpose flour, 1/2 cup chopped pecans, 1/2 cup melted margarine
