Sweet Potato Biscuits

Ingredients:

3/4 cup mashed sweet potatoes

4 tablespoons butter, melted

4 teaspoons baking powder

1/2 teaspoon salt

1 tablespoon granulated sugar

2/3 cup milk

1 1/4 cup all-purpose flour

Directions:

Preheat oven to 425 degrees. In a medium bowl, combine sweet potatoes, milk and butter; mix well. Slowly add flour, baking powder, salt, and sugar to potato mixture, mixing well to make a soft dough. Turn out on a floured surface; toss gently until dough is smooth. Roll out 1/2" thick; cut with biscuit cutter. Place on greased baking sheet. Bake at 425 degrees for 15 minutes or until done.
