Sugar-Free Blackberry Jelly

Ingredients:

2 packages unflavored gelatin

24 ounces unsweetened blackberry juice

2 tablespoons unsweetened lemon juice (in bottle)

2 tablespoons liquid sweetener

Directions:

In saucepan, soften gelatin in blackberry juice and lemon juice. Bring to a rolling boil; boil for 1 minute. Remove from heat. Stir in liquid sweetener. Pour into hot, sterilized jars. Seal. Store in refrigerator.

Note: Make Grape Jelly by using the same recipe, but substitute unsweetened grape juice for the blackberry juice.
