Stuffed Strawberries

Ingredients:

20 large fresh strawberries

1 package (3 ounces) cream cheese, softened

2 tablespoons finely chopped pecans

1 1/2 tablespoons confectioners' sugar

1 teaspoon orange juice

Directions:

Dice 2 strawberries and set aside. Cut a thin slice from stem end of each remaining strawberry, forming a base for strawberries to stand on. Cut each strawberry into four wedges, starting at pointed ends and cutting to but not through the stem ends.

Beat cream cheese at medium speed until fluffy. Stir in diced strawberries, pecans, sugar & orange juice. Spoon about 1 teaspoon mixture into each strawberry. Refrigerate until ready to serve.

Note: fill strawberries no more than four hours before serving.
