Strawberry Pudding Cake

Ingredients:

1 prepared angel food cake, torn into small pieces

1 cup milk

1 egg, at room temperature

1 envelope unflavored gelatin

1/2 cup granulated sugar

1 cup whipping cream

1 teaspoon granulated sugar

1 teaspoon vanilla extract

1 cup frozen strawberries

Directions:

In in saucepan, combine milk, egg, gelatin and sugar. Cook on medium heat until it reaches a soft custard stage (it will coat the spoon). Set aside to let cool.

In a medium bowl, start whipping the cream; slowly add sugar and extract and continue whipping until stiff peaks form.

After gelatin has cooled, add 1 cup of strawberries and fold into the whipping cream.

In a large bowl, place 1/3 of the angel food cake pieces. Top this with 1/3 of the strawberry gelatin. Repeat this for two more layers. Refrigerate until ready to serve.
