Strawberry Glaze

Ingredients:

3 cups fresh strawberries

1 cup water

1 1/2 tablespoon cornstarch

1/2 to 3/4 cup granulated sugar (amount of sugar depends on sweetness of berries)

5 drops red food coloring

Directions:

Crush 1 cup of the strawberries; add the water and cook for 2 minutes; sieve. Mix the cornstarch and sugar and stir into hot berry mixture. Bring to boiling, stirring constantly. Add food coloring. Cook and stir until thick and clear. Cool glaze and then add remaining fresh berries. Place atop cheesecake and chill about 2 hours.
