Sprite Salad

Ingredients:

2 packages (3 ounces each) lemon gelatin

2 cups boiling water

2 cups cold Sprite

1 can (20 ounces) crushed pineapple, drained and juice saved

2 large bananas, sliced

Directions:

In a medium bowl, stir together the gelatin and boiling water until it has all dissolved. Stir in the Sprite, pineapple, and sliced bananas. Pour into a 13" x 9" glass dish. Let chill until firm.

Topping Ingredients:

1 cup pineapple juice

1/2 cup granulated sugar

2 tablespoons all-purpose flour

1 egg, slightly beaten

2 tablespoons butter

1 cup whipped topping

1 can (3.5 ounces) shredded coconut

1/2 cup chopped pecans

Directions:

In a small saucepan, stir together pineapple juice, sugar, flour, egg, and butter. Cook until thick; let cool. Fold in whipped topping and coconut. Spread over base, sprinkle nuts on top.
