Sprite Cake

Ingredients:

1 1/2 cups butter, at room temperature

1/2 cup shortening

3 cups granulated sugar

4 eggs, at room temperature

3 cups all-purpose flour

1 teaspoon vanilla extract

1 teaspoon lemon extract

1 bottle (10 ounces) Sprite

Directions:

In a mixing bowl, cream the butter, shortening and sugar. Add eggs, one at a time, and beat thoroughly. Add flour gradually, continuing to beat. Add flavorings. Slowly add Sprite. Beat until thoroughly mixed. Pour in a greased non-stick bundt pan. Bake at 325 degrees for 1 hour 10 minutes.

While cake is baking, prepare the Coconut-Pineapple Topping.

Allow cake to cool on rack for about 20 minutes before inverting to wire rack. Allow the cake to completely cool before placing on a cake dish. Pour topping over the cake.
