Spoon Bread

Ingredients:

1 cup cornmeal

1 cup water

2 cups milk

4 eggs, separated

3 teaspoons baking powder

1 1/2 teaspoons granulated sugar

1 teaspoon salt

1/4 cup butter

Directions:

Preheat oven to 350 degrees. In a bowl, mix the meal and water together. Place milk in medium saucepan and scald. Stir cornmeal mixture into scalded milk and cook until thick and mush-like, stirring constantly. Remove from heat and cool. In small bowl, beat egg yolks well; then add baking powder, sugar, salt and butter. Add to meal mixture. Beat egg whites stiff and fold into mixture. Pour into lightly buttered casserole dish. Bake at 350 degrees for 45-55 minutes or until puffy and firm.
