Spinach Rice

Here's a delicious way to use up left-over rice or you can prepare it fresh.

Ingredients:

3/4 cup chopped sweet red pepper

2 teaspoons butter

4 cups loosely packed fresh baby spinach

4 tablespoons chopped green onion

2 garlic clove, minced

1/4 teaspoon dried rosemary, crushed

1/4 teaspoon crushed black pepper

2 cups cooked long grain rice

4 tablespoons grated Parmesan cheese

2 tablespoons pine nuts, toasted

Directions:

In a skillet, saute red pepper in butter until tender. Stir in the spinach, onion, garlic, rosemary and pepper; cook until spinach is wilted. Stir in the cooked rice, Parmesan cheese and pine nuts; cook for 1-2 minutes or until heated through. Yield: 4 servings
