Spinach & Bacon Quiche

Ingredients:

frozen 9" pie shell, thawed

1/2 pound crisp bacon, crumbled

1/4 pound shredded Swiss cheese

1/4 teaspoon nutmeg

4 ounces water chestnuts

10 ounce box frozen chopped spinach

Dijon mustard, just enough to coat pie shell

chopped red pepper, just enough to add a little color

1 can Milnot

2 eggs

2 tablespoons self-rising flour

1 teaspoon minced onion

1/2 teaspoon salt

pinch of black pepper

Directions:

Pre-heat oven to 400 degrees.

Grease 9" quiche dish and spread pie shell. Coat pie shell with mustard. Squeeze water out of spinach and spread on pie shell.

Combine Milnot, eggs, flour, nutmeg, onion, salt, pepper, and water chestnuts and pour over the spinach.

Sprinkle bacon, cheese and red pepper over previous layer.

Bake at 400 degrees for 30 minutes. Let stand 5 minutes before cutting.
