Southern Honey Cake |
Ingredients: 1/4 cup pineapple juice 1/4 cup water 3/4 teaspoon baking soda 1 cup granulated sugar 3 eggs, at room temperature 1 cup cooking oil 1 cup honey 2 1/2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon salt 2 teaspoons ground cinnamon 1/2 teaspoon ground allspice 1 teaspoon vanilla extract 1/2 cup chopped pecans Directions: Preheat oven to 325 degrees. In a small saucepan, combine pineapple juice and water; bring to a boil. Stir in soda; set aside. In a mixing bowl, combine sugar and next 3 ingredients; beat at medium speed of an electric mixer until well blended. Combine flour and next 4 ingredients; add to creamed mixture alternately with pineapple juice mixture, beginning and ending with flour mixture. Mix after each addition. Stir in vanilla and pecans. Spoon batter into a greased 12-cup Bundt pan. Bake at 325 degrees for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and let cool completely on wire rack. |
