Snow Pea Surprises

Ingredients:

30 snow peas, fairly uniform in size

1 1/2 quarts water

1/2 teaspoon salt

3 hard-boiled eggs, chopped

1 can (4.5 ounces) deveined small shrimp, rinsed, drained & chopped

1 teaspoon instant minced onion

1/2 cup finely chopped celery

2 teaspoons lemon juice

1 teaspoon dijon-style mustard

1/4 cup mayonnaise

1/4 teaspoon salt

1/8 teaspoon crushed black pepper

paprika, for garnish

Directions:

Wash and string snow peas. In large saucepan, bring water and salt to a boil over high heat. Add snow peas and cook for 45 seconds; drain and rinse immediately under cold water. Split well-drained peas open with a small sharp knife; set aside.

In mixing bowl, combine eggs, chopped shrimp, onion, celery, lemon juice, mustard, mayonnaise, salt and pepper. Mix until well blended.

Stuff snow peas with salad mixture and place on paper towels to soak up any excess moisture. Cover and chill. When ready to serve, arrange on serving platter and sprinkle with paprika.
