Sliced Baked Potatoes

Ingredients:

4 medium potatoes

1 teaspoon salt

3 tablespoons melted butter

2-3 tablespoons chopped fresh herbs, such as parsley, chives, thyme or sage

4 tablespoons grated Cheddar cheese

1 1/2 tablespoons Parmesan cheese

Directions:

Preheat the oven to 425 degrees. Wash the potatoes thoroughly. Peel the potatoes if the skin seems tough, otherwise just scrub and rinse them.

Using a sharp knife, make cuts of thin slices into the potatoes, but not all the way through. Use a handle of a spoon to prevent the knife from cutting all the way.

Put the potatoes in a baking dish. Fan them slightly. Sprinkle with salt and drizzle with butter. Sprinkle with herbs. Bake at 425 degrees for about 50 minutes. Remove from oven. Sprinkle with cheeses. Bake for another 10-15 minutes or until lightly browned, cheese are melted, and potatoes are soft inside. Check with a fork.

These potatoes go great with any meat, fish, or poultry dish or can be served as a main dish with just a salad.
