Skillet-Fried Corn Fritters

Ingredients:

1 can (15.25 ounces) whole kernel corn, undrained

1/3 cup evaporated milk

2 eggs, beaten

1 1/2 cups all-purpose flour

2 teaspoons baking powder

3/4 teaspoon salt

cooking oil

Directions:

Drain the corn, reserving the liquid; set corn aside. Add enough corn liquid to the milk to equal 1/2 cup. In a medium bowl, combine milk mixture and eggs; mix well. Add flour and baking powder, stirring until smooth. Stir in corn.

In a large skillet, heat 1/4" deep oil to 350 degrees. Drop in corn mixture by heaping teaspoonfuls; cook only a few at a time, turning once. Fry 3-5 minutes or until fritters are golden brown. Drain on paper towels and serve immediately. Yields about 40 fritters.
