Shrimp-and-Cheese Omelet

Ingredients:

2 large eggs, at room temperature

1 tablespoon water

1 tablespoon butter

3 tablespoons shredded Monterey Jack cheese

1/4 cup coarsely chopped cooked shrimp

1 tablespoon sliced green onions

2 teaspoons chopped fresh parsley

1 whole shrimp & green onion, for garnish

Directions:

Whisk together eggs and water; set aside. Mix cheese, chopped shrimp, green onions, and parsley in a bowl and have ready.

Heat an 8" non-stick skillet over medium heat. Add butter, rotate pan to coat. Add egg mixture. As mixture starts to cook, gently lift edges of omelet with a spatula, and tilt pan so that uncooked portion flows underneath it.

Sprinkle half of omelet with the cheese mixture; fold in half. Do not overcook. Transfer to a serving plate; garnish, if desired. Serve immediately.
