Seared Peach Pancakes

Ingredients:

4 medium peaches

2 cups all-purpose flour

1/4 cup granulated sugar

2 tsp. baking soda

3 eggs

1 3/4 cups milk

2 tbs. butter, melted

1 tbs. malt vinegar

Directions:

Slice peaches crosswise, about 1/4" thick, cutting around the pit to form rings.

In a mixing bowl, combine flour, sugar, and baking soda. Make a well in the center of the flour mixture and set aside.

In another bowl, whisk together eggs, milk, butter, and vinegar. Add this mixture to the flour mixture. Stir until moistened.

Add about 1 teaspoon butter to a hot, large, non-stick skillet or griddle. Place a peach slice on the hot skillet (Note: peaches will caramelize when they hit the skillet. That's okay.)

Pour or spread about 1/4 cup batter over each peach.

Cook over medium heat for about 2 minutes on each side, until the pancakes are golden brown, turning when pancakes have bubbly surfaces and edges are slightly dry.

Repeat with remaining batter and peach slices, adding butter to skillet as needed.

Serve warm, with your favorite syrup.
