Seafood Alfredo Fettuccine

Ingredients:

1 pound fettuccine noodles, cooked

6 pieces of baked fish

1/3 pound each of scallops, shrimp & crabmeat

3 tablespoons butter

1 clove garlic, crushed

juice of 1/2 lemon

1/4 cup white grape juice

4 tablespoons butter, melted

1/4 cup grated Parmesan cheese

1/4 cup grated Romano cheese

1/2 cup half-and-half

1/4 teaspoon salt

1/4 teaspoon crushed black pepper

parsley, chopped very fine

Directions:

In a medium saucepan, prepare noodles according to package directions. Drain and set aside. Bake your favorite fish and keep warm until ready to serve.

In a medium skillet, saute scallops, shrimp and crab in butter with garlic on medium high heat until shrimp are opaque and cooked through. Do not over cook. Squeeze in lemon juice. Add grape juice and cook at high heat for approximately 3 minutes.

Add ingredients for Alfredo Sauce (4 tbsp. butter, Parmesan cheese, Romano cheese, and half-and-half) and cook at low heat for 3-5 minutes. Toss in cooked noodles and gently mix.

A delicious meal when served on warm fish and topped with fresh parsley.
