Savory Chicken & Biscuits |
Ingredients: 2 tablespoons olive oil 1 pound boneless skinless chicken breasts, cut into 1" pieces (about 2 cups when cooked) 1 medium onion, chopped 1 cup thinly sliced carrots 1 cup thinly sliced celery 1 envelope Savory Herb with Garlic Soup Mix 1 cup milk 1 package (10 ounces) refrigerated flaky buttermilk biscuits Directions: Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high heat and cook chicken for 5 minutes or until almost done, stirring occasionally. Stir in onion, carrots and celery; cook, stirring occasionally, for another 3 minutes. Stir in soup mix blended with milk. Bring to boiling point over medium-high heat, stirring occasionally; cook 1 minute. Pour into lightly greased 2-quart casserole dish; arrange biscuits on top of chicken mixture with edges touching. Bake at 400 degrees for 10 minutes or until biscuits are golden brown. Yields about 4 servings. |
