Sausage Quiche

Ingredients:

1 pound crumbled sausage

pastry for 9" pie shell

3 eggs, at room temperature

2/3 cup milk

1 teaspoon salt

1/4 teaspoon crushed black pepper

1/4 teaspoon cayenne pepper

1 1/2 cups (6 ounces) shredded cheddar cheese, divided

Directions:

Preheat oven to 400 degrees. Line a 9" quiche dish or pie pan with pastry; trim excess pastry around edges. Bake at 400 degrees for 3 minutes; remove from oven and gently prick with a fork. Bake 5 minutes longer. Let cool on wire rack.

Reduce oven heat to 375 degrees. Cook sausage in a skillet until browned; drain. Combine eggs, milk and seasonings in a medium mixing bowl; beat lightly. Stir in sausage. Sprinkle 3/4 cup cheese over pastry shell; top with sausage mixture. Sprinkle with remaining cheese. Bake at 375 degrees for 50 minutes or until set.
