Saltine Cracker Pie |
Ingredients: 3 egg whites, at room temperature 1 cup granulated sugar 1 teaspoon vanilla extract 1/2 teaspoon baking powder 1/2 cup crumbled saltine crackers (about 10 singles) 3/4 cup chopped pecans whipped topping & chopped pecans, for garnish Directions: Preheat oven to 325 degrees. In a medium bowl, beat egg whites until slightly white. Add sugar and baking powder. Beat until it holds a peak. Fold in crackers and nuts. Pour into a buttered pie pan. Bake at 325 degrees for 25 minutes. Let stand 4 hours before serving. Top with whipped topping; sprinkle chopped pecans on top. |
