Salad Nicoise

Ingredients:

1 bottle (8 ounces) Italian dressing

2 cups cooked potato slices

1 cup cut green beans, cooked, drained

2 quarts torn assorted greens

1 can (6.5 ounces) tuna, drained & flaked

2 medium tomatoes, cut into wedges (or 10 cherry tomatoes, halved)

1/4 cup ripe olives, cut in half

1/4 cup green onion slices

2 hard-boiled eggs, sliced

Directions:

In a medium bowl, pour dressing over potatoes and beans; cover and refrigerate for several hours. Drain, reserving the marinade.

Place greens in a large salad bowl. Add potatoes, beans, tuna, tomatoes, olives and green onion; toss lightly. Garnish with egg slices. Serve with reserved marinade. Yields 6 servings.
