Roasted Herb Potato Wedges

Ingredients:

4 tablespoons Dijon mustard

2 tablespoon olive oil

2 tablespoon rosemary, freshly chopped

2 tablespoon fresh oregano, chopped

2 tablespoon parsley, freshly chopped

1 teaspoon salt

1/2 teaspoon crushed black pepper

2 pound new potatoes, white or red skinned, cleaned and cut in half

Directions:

Preheat oven to 425 degrees. Combine all ingredients, except potatoes, in a small bowl.

Place potatoes in a large zip-close plastic bag. Add mustard mixture. Close bag and shake to coat.

Pour contents of bag into a shallow baking pan coated with cooking spray.

Bake at 425 degrees for about 30 minutes, turning occasionally, until potatoes are tender. Depending on how crisp or how soft you want the potatoes will determine how much longer to cook them. Yields 8 servings.
