Ricotta-Spinach Dip

Ingredients:

1 bunch fresh spinach (approximately 3/4 pound)

1 pound ricotta cheese

4 scallions, very finely chopped

5 radishes, finely chopped

1/4 teaspoon salt

1/4 teaspoon crushed black pepper

1 tablespoon fresh dill, chopped

1/2 cup water chestnuts, finely chopped

Directions:

Stem the spinach, and clean it thoroughly in several changes of cold water. Dry with paper towels. Place the ricotta in a medium-large bowl. Use a wire whisk or wooden spoon to beat it until quite smooth. Stir in the spinach and all other ingredients. Cover tightly and chill until very cold.

Serve with chips, raw vegetables, or good crackers.
