Raw Apple Cake

Ingredients:

2 eggs, at room temperature

1 cup granulated sugar

2/3 cups cooking oil

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/8 teaspoon salt

2 cups raw apples, unpeeled and chopped fine

1 cup pecans, chopped

1 teaspoon vanilla extract

Directions:

Preheat oven to 325 degrees. In a medium mixing bowl, beat eggs and sugar. Add oil and flour; mix well. Add apples , pecans and vanilla and mix until all are blended.

Pour batter into a greased 9" x 13" baking pan. Bake at 325 degrees for 50 minutes. Place on wire rack to cool for ten minutes.

This cake can be eaten plain, with ice cream, or with a sweet glaze (found in our recipes).
