Raisin Bran Muffins |
Ingredients: 1 box (20 ounces) raisin bran 5 cups all-purpose flour 3 cups granulated sugar 5 teaspoons soda 2 teaspoons salt 1 tablespoon crushed cinnamon 4 eggs, beaten 1 quart buttermilk 1 cup cooking oil Directions: In a medium mixing bowl, mix raisin bran, flour, sugar, soda, salt, and cinnamon. Add eggs, buttermilk and oil. Place in a closed container and refrigerate. Note: This recipe will make 6 dozen muffins, but this batter will keep for up to 6 weeks. Take out and use only what you need at one time. Preheat oven to 400 degrees. When ready to bake, remove batter from refrigerator but do not stir. Spoon into greased muffin tins, filling only half way. Bake at 400 degrees for 20 minutes. |
