Quick Biscuits

Ingredients:

2 1/4 cups baking/biscuit mix

1/4 teaspoon baking soda

1/3 cup butter

2/3 cups milk

Directions:

Preheat oven to 450 degrees. In a medium mixing bowl, combine biscuit mix and soda; cut in butter, then add milk. Stir ingredients until soft dough forms. Turn onto surface sprinkled with biscuit mix or flour. Knead 10 times. Roll dough 1/2" thick. Cut with biscuit cutter or a juice glass dipped in flour. Place on ungreased cookie sheet, leaving an inch or two between the biscuits. Bake at 450 degrees for 8-10 minutes or until golden brown. Loosen the freshly baked biscuits from the tray with a spatula so they don't stick. Yields: 9 biscuits
