Pumpkin Spice Breakfast Cakes

Ingredients for Cakes:

1/4 cup butter, at room temperature

1/4 cup granulated sugar

1 egg

1 teaspoon vanilla extract

1/3 cup pumpkin, pureed

1/3 cup whole wheat pastry flour

1/8 teaspoon salt

1/4 teaspoon cinnamon

1/8 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon pumpkin spice

Directions for Cakes:

Preheat oven to 350 degrees. In a medium bowl, cream butter and sugar together until light and fluffy. Add egg and mix well. Add vanilla and pumpkin.

In another bowl, mix flour, salt, cinnamon, flour, baking powder, and pumpkin spice;  add this to pumpkin batter, only mixing until just combined.

Spray 2 small oven-proof bowls with non-stick spray and pour in batter. Bake at 350 degrees for 30-35 minutes or until done.

Ingredients for Maple Glaze:

1/2 tablespoon maple syrup

3/4 cup confectioners sugar

1 drop water

Directions for Glaze:

In a small bowl, mix syrup, sugar and water together to form a glaze. Depending on desired consistency, add more water a drop at a time. Drizzle over cooled cakes.
