Pumpkin Pancakes

Ingredients:

1 1/4 cups self-rising flour

1/2 teaspoon cinnamon

1/2 teaspoon ginger

1/2 teaspoon salt

2 tablespoons brown sugar

2 tablespoons melted butter

1 cup milk

9 tablespoons canned pumpkin (do NOT use pumpkin pie mix)

1 egg

Directions:

In a medium bowl, mix all ingredients together. Drop 1/8 cup batter onto griddle or nonstick skillet on medium high. Flip when edges starts to firm up.

Yields 8-12 pancakes.
