Potato Spinach Casserole |
Ingredients: 8 large potatoes, peeled, cooked & mashed 1 cup (8 ounces) sour cream with chives 2 teaspoons salt 1/4 teaspoon crushed black pepper 2 tablespoons chopped chives or green onion tops 1/4 cup butter 1 package (10 ounces) frozen chopped spinach, thawed & well drained 1 cup (4 ounces) shredded cheddar cheese Directions: Preheat oven to 400 degrees. In a large bowl, combine all ingredients except the shredded cheese. Mix well and spoon into a greased 8" x 8" (2-quart) baking dish. Bake, uncovered, at 400 degrees for 15 minutes. Top with cheese and bake 5 minutes longer. Yields 6-8 servings. |
