Potato & Ham Casserole |
Ingredients: 2 tablespoons chopped onion 1/4 cup margarine 1/4 cup flour 1 teaspoon salt 1/2 teaspoon dry mustard 1/4 teaspoon crushed black pepper 1 1/2 cups milk 2 cups (8 ounces) shredded natural mild cheddar cheese 1/2 pound ham, cut into 1/8" thick slices 6 cups cooked sliced potatoes Directions: Preheat oven to 350 degrees. In a medium skillet, saute the onion in the margarine. Blend in the flour and seasonings. Gradually add milk; cook, stirring constantly until thickened. Add 1 1/2 cups cheese, stir until melted. Toss potatoes in cheese sauce. Pour into 11" x 9" casserole dish, reserving one cup potato slices. Arrange ham and remaining potato slices on top of casserole. Bake at 350 degrees for 30 minutes. Top with remaining cheese. Serves 6. |
